Come on people, as soon as we return on Tuesday we all will be bringing the germs back with us. Germs are everywhere. What is the point of closing unless teachers are the ones with the flu? Am I right or am I right? I should be grateful for a surprise day off, but in my field of work, I require a substitute. That means I have to write down precise instructions for someone to pretend they're me, so the students won't be able to tell the difference. I could find another facility that takes drop-ins, but then the girls would not no anybody and it would cost me 60 bucks to worry about them all day. I encouragingly told her that we'll all be fine. Don't worry about us. I regretted those words. Weeks later I started to dream about her. In those dreams I would frantically tell her the real truth.
My mom is in heaven and I will see her again. I grieve, but with an eternal hope that only comes from Jesus. They are great for sandwiches and hamburgers and only 100 calories.

I have to add that I probably did have a type flu virus over the long weekend. Upon arriving to school this morning, all faculty were asked to meet in library for a brief meeting. The swine flu is upon us. Well, not officially confirmed, but some type A flu which could be the H1N1 is upon us. In other words, "Wash your hands." If I wasn't already paranoid, I am now. I'm hoping my self-diagnosed flu will immune me to anything else floating around the halls of my school. I pray fervently that my girls will be protected, in the Name of Jesus! You are our Healer Lord and the Only One with Mercy and Strength to help us get through this flu season! Help us Lord.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-72622604985061309672009-09-07T06:00:00.000-07:002009-09-07T07:10:34.283-07:00Labor Day WeekendToday is the first day I have felt well enough to do anything other than lay in bed and pray that my family will not catch the same thing. I have had what you would call a very bad sinus infection. The only thing worse than staying awake at night with your own cold is staying awake with a sick child. Oh, the scale says I'm 2 pounds lighter, so maybe it's been worth it.
Our menu for this week will look a lot like last week's because I asked J to carry in the lightest bag of groceries I had. That would have been the one with the two packages of fresh boneless skinless breasts. That chicken never saw the light inside the fridge and layed on the living room floor for about 3 hours before I noticed it and tried to refrain from going all balistic. What a waste and completely my fault! J was obviously headed to play as soon as she stepped into the house and I was distracted with the load of groceries I was carrying...? Needless to say, we had no chicken for all the chicken recipes and I was too sick to cook over the weekend.

Somewhat a Repeat Menu
Monday: Taco Salad
Tuesday: Slow Cooker Chicken Stroganoff
Wednesday: Chicken Strip Salad
Thursday: Chili Enchiladas
Friday: Fried Rice and Steamed Vegetables
Saturday: Loaded Baked Potato Soup
Sunday: I hope we have money to eat out!Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com1tag:blogger.com,1999:blog-7116942858522515352.post-90556455074371330742009-08-29T07:12:00.000-07:002009-08-29T07:32:54.182-07:00Menu Plan MondaySometimes I look at my menus and think that I am asking for a lot of work.

Monday: White Chicken Chili Enchiladas
Tuesday: Ravioli Bake with pepperoni
Wednesday: Slow Cooker Chicken Dumplings, Carrots
Thursday: Brown Rice and Stuffed Tomatoes
Friday: Hamburgers and Fries
Saturday: Taco Salad
Saturday Night: Chicken Strips and Gravy, Steamed Vegies
Sunday: BBQ Meatloaf, Broccoli

Linked to Orgjunkie.com - my favorite site for recipes and organization!Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-30092262873955619142009-08-23T12:38:00.000-07:002009-08-23T12:49:30.371-07:00Menu Plan MondayMonday - Sloppy Joes, Broccoli, Oven Fries
Tuesday - Breaded Chicken Strips, Gravy, Steamed Vegetables
Wednesday - BLT's, Potato Salad
Thursday - Spaghetti, Garlic Toast
Friday - Taco Salad
Saturday - Barbeque Chicken, Baked Potatoes
Saturday Night - Barbeque Chicken Pizza
Sunday - Chicken Taco SoupDebbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-497773270915246352009-08-22T06:21:00.000-07:002009-08-22T06:30:00.889-07:00Chicken BurnoutMonday - Chicken Fajitas
Tuesday - Breaded Chicken Strips; Honey Glazed Carrots
Wednesday - Three Cheese Chicken
Thursday - Bean and Cheese Burritos; Apple Sauce
Friday - Chick-fil-ADebbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-17161919455772389912009-07-14T07:34:00.000-07:002009-07-14T08:06:34.958-07:00Safety firstJ has been asking for a while when she doesn't have to sit in her car seat. I finally looked up the new child seat laws for Texas. I remember the days when my parents drove an orange full size van with a stripe down the side. My sisters and I would ride in the back on the floor ALL the time. Times have changed. I've started shopping for some booster seats and found some real cute ones here and here.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-28425720856826906202009-05-21T05:09:00.000-07:002009-05-21T05:09:01.782-07:00Chicken Alfredo RecipeMuy excelente! I really felt like a chef preparing this one and wished I hadn't chosen a Tuesday to attempt it. Way too many ingredients for a weeknight.
CHICKEN ALFREDO - I doubled the recipe to ensure leftovers, left out the mushrooms because, "Yuck" and used Spinach fettuccini noodles which smelled really gross while cooking. Just FYI.

MY NEXT ENDEAVOR....My husband admits to eating gas station cuisine and even claims the best hamburger he has ever eaten was purchased at a gas station. That said, his stomach must be made out of steel and so loves hot and spicy food. I figure something wrapped around a jalapeno would be a great meal to offer for our 5th anniversary coming up June 5th.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-58061681382485543852009-05-20T16:49:00.000-07:002009-05-20T17:06:29.382-07:00M&M's with a Side of GuiltMy joyful four year old J came bopping into the living room and said, "Mrs. Amy..." I was humored and she was embarrassed. Wait a minute. Isn't she supposed to be calling her teacher "Mom" by mistake? Isn't mom the one she instinctly calls out for when she has a problem or needs something? Could it possibly be the fact that J spends more time with her teacher than with me? Oh summer. You save me from being completely devoured by guilt.
Speaking of guilt, I may deserve a little for my new potty training technique. I bought a 42 oz bag of M&Ms at Target the other day going on and on throughout the store that they were for all of us to celebrate A's poo-poos in the potty. I figured her going "number one" was far too frequent and I wanted my $8.00 investment to last a while. Through several missed attempts, (and my self-control) the bag of M&Ms has remained closed until I came up with a brilliant idea. Now, everytime A doesn't make it to the potty, I'm going to give big sister J some M&ms. So cruel, but I assure you, much more affective!Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com1tag:blogger.com,1999:blog-7116942858522515352.post-76426512116913760172009-04-10T11:42:00.000-07:002009-04-10T12:10:58.972-07:00Menu Plan MondayMonday: S.O.G.P (I'm using fresh green beans instead of green peppers. Wash and place in Ziploc with 1 cup Zesty Italian Dressing. Let marinade for 1 hour. Place Asparagus in a single layer on a foil lined oven-proof pan. Generously shake on grated Parmesan cheese for a crusted look, I used about 1/2 cup. Bake at 400 for 20+ minutes until tender. I let Audrey eat this with her fingers, so maybe that's what made it extra special.

Ingredients:
Asparagus
Italian Dressing
Grated Parmesan Cheese

The Gals are also a big fan of the Honey Glazed Carrots.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com1tag:blogger.com,1999:blog-7116942858522515352.post-38342099990953036272009-03-16T14:36:00.000-07:002009-03-16T14:47:25.750-07:00Barbecue chickenMy husband told me that I make the BEST barbecue chicken and he would enter into a taste contest. Menu planning during the school year is vital, but I don't always have the time. I've been ad-libing so far this week. Also, the family's belt strap just got tightened a extra 2 or twelve notches and I have to cook dinner with what I've got thru Wednesday. Don't feel sorry for us, I've got a bag of frozen yellow squash in the freezer and some Tilapia, Yum. It's just like pushing a not-so favorite outfit to the back of the closet just in case you may be desparate for something clean to wear one day. Well, all that healthy food I've been pushing to the back of the freezer must now come forward to be reckoned with. And the girls? They'll be getting that can of Spaghetti O's. I might even end up opening that can of saurkraut that's been staring at me since summer.

Sunday Lunch: Frito Pie
Sunday Dinner: Eggs 'n Tortillas

Monday: Easy Chicken Enchiladas

Tuesday: Tilapia and Squash
Spaghetti O's

Wednesday: It'll be a surprise.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-65802953835312629312009-02-27T17:18:00.000-08:002009-02-27T17:50:50.923-08:00Times are busy around the schoolhouse these days and I am seriously earning my paycheck this month. My brain is bustling with all sorts of "to do's" at school and at home. Balancing work and home has no balance at all. I heard a lady on the radio say women working outside the home are really working outside the will of God. For anyone wanting to send her hate mail - I truly can't remember her name right now, but it will come to me. Sometimes I feel that dragging my pre-schoolers out of bed every morning is extra difficult because I know deep down it's not right.

I got a call about 10:30am today from J's teacher. She said that J was playing outside and hit herself in the eye with her knee. I drove over to her school to survey the damage. J's eye looked like it belonged to a prize fighter.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-5687763185198619412009-02-23T15:54:00.000-08:002009-02-27T17:18:11.844-08:00Menu Plan Monday Monday - Pizza Soup (you'll need to scroll down some on linked page)
Garlic Bread
Cesar Salad
Tuesday - Sloppy Joes
Creamed Corn
Chips
Wednesday - Baked Potatoes
Grilled Cheese
Apple Sauce
Thursday - Black Bean Burgers
Cole Slaw

Chips
Friday - Orange Chicken
Rice
Yellow Squash
Saturday Lunch - Tuna Salad
Chips/Salsa
Saturday Dinner - Crockpot BBQ Chicken
Sunday Lunch - Eat out I hope
Sunday Dinner - Scrambled Eggs/Tortillas

As far as last week's menu. I've also got two new salad recipes I hope will be winners. Three spicy dishes this week might seem excessive, but they'll be toned down a little (and still taste good I hope) because I'll use paprika which is a bit milder than what the recipes call for. Keep your fingers crossed cause I really have no real proof of this and I don't know what I'm doing exactly.

I found the "spicy enchilada" recipe after I googled recipes for Ocean Spray's Cranberry Sauce...it expires this month. YIKES! God bless it cause I'm gonna use it. I end up wasting so much food which I forget about and/or gets "lost" somewhere in my fridge, so I will not give up so quickly on my Feb - 25- 2009 Cranberry sauce.

I haven't posted my menu on orgjunkie.com in a while, but I have found so many good recipes using her sight!

Monday Evening - Crunchy-Baked-Chicken, Shells n Cheese, Spicy Greens (Recipe off of Pictsweet package)

Tuesday Evening - Apple-Pecan-Cranberry-and-Avocado-Spinach-Salad-with-Balsamic-Dressing ; the gals - Ramen noodles, grilled cheese, apples-cranberry-carrots from salad

Wednesday Evening - Cheesy Tilapia ; the gals - Pizza Rolls, corn, apple sauce

Thursday Evening - Spicy Enchiladas ; the gals - Cheese/Bean tortillas, canned peaches

Friday Evening - Celery Salad ; the gals - Hot Pockets, peas

Saturday Lunch - Canned soup and crackers, tuna salad

Saturday Evening - Easy Baked Tilapia ; the gals - chicken nuggets, gravy, rice, yellow squash

Sunday Lunch - Scrambled Eggs and Toast/Tortillas

Sunday Evening - Mexican Spicy Chicken in Orange Juice, black beans, guacamole, chips

Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-45169838853738924502009-01-19T10:19:00.001-08:002009-01-19T10:32:00.243-08:00I've Been SavedI love this song "Saved" byKent Bottenfield. So much in fact, I wanted to add it to my blog songs; which might explain the reason I am actually blogging again after so long. I am saved and I have done nothing but accept the fact that I need Jesus and He gave His life for my sins. There's just no other way to heaven. And there is no other heaven than the one where Jesus is right now. I hope you're ready. I hope you're not hoping that you'll slide on through at the last minute because your such a nice person and all. None of us are worthy. It's knowing Jesus. And when you know Him, you're not suddenly all wonderful, it's just simply--- you're saved.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-23293486934811493402008-10-19T06:33:00.000-07:002008-10-19T12:56:39.797-07:00Menu Plan Sunday: Barbecue B LT Chicken Salad

dessert: Strawberry Biscuit Shortcake

dinner: Cereal/Oatmeal

Monday: Broccoli Beef Supper

Tuesday: Sweet and Sour Chicken

Wednesday: Chicken Nuggets, Corn on the Cob, steamed carrots, rolls

Thursday: Rice and Chili Beans

Friday: Homemade Pizzas

Saturday: Chicken Nuggets, mashed potatoes, apple sauce

dinner: Slow Cooker Chicken Taco Soup

Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-1231966854984507292008-10-19T05:46:00.000-07:002008-10-19T06:16:24.306-07:00Vote and Vote EarlyI was sitting in the dreaded Teacher's lounge eating lunch with some unique and wonderful women. We were talking politics and I announce that it doesn't matter if the Democrat is purple or pink, I'm a Republican. That was wrong and I wish I could go back and say instead, "I'm a Christian. I'm not voting for any party that does not coiincide with my Christian beliefs." My sister says that the word Christian does not hold the best connotation these days and I should say I want to vote with the Bible. What does the Bible say about the economy? I know I should trust the Lord with all my heart, not store my treasures here on earth, and God takes care of the sparrow and dresses the lillies of the field. I'm not sure how that equates to a vote on either side of party lines, but I'm not ashamed of my siding with God and the Bible. There is a Baptist minister running for president, but I'm not sure his chances are all that great, so I'll just stick with one of the two big guys. Early voting begins Monday, and I will SO be at the poles. Not only because I hate the rushed feelings on the actual last chance voting day, but I REALLY want to GET THIS OVER WITH.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0tag:blogger.com,1999:blog-7116942858522515352.post-66919184216028561202008-10-01T16:47:00.000-07:002008-10-03T17:06:12.445-07:00Infanticideand I thought partial-birth abortion was bad. now we have induced labor abortion. babies taken pre-maturely and allowed to die. God please reveal Your true self to Obama. Give his wife dreams of those babies that he has voted legislation to kill. That ran out several days ago, so I decided to buy a gallon at Braum's. Both my sisters had mentioned Braum's milk didn't have some hormone that others had and to quote one sister, "They know their own cows." Makes sense to me and I was delighted at the other goodies I could get there. I bought bananas, carrots, apples and yogurt. I threw caution to the wind and even bought a gallon of Braum's Iced Tea. I stopped myself from buying some ice-cream because that would have made just too much sense. Now that "the recession that noone wants to admit to" has hit us middle classers in the grocery department, I didn't see much of a price difference, so I'll be back again. Another highlight was the paper bags at the checkout. The smell and crinkly sound of which takes me back to childhood. I have bought into the whole go green thing at HEB and have purchased 4 of their re-usable cloth bags. They were only a buck each and I feel pretty cool carrying them. Also, the handles don't pinch your hands like the plastic ones can.Debbiehttp://www.blogger.com/profile/01868540136522121044noreply@blogger.com0
